Cooking with Peanut Butter

Peanut butter can be enjoyed in so many forms and you may not even know it! This condiment spreads far beyond a simple peanut butter and jelly sandwich. Peanut butter is a great source of protein and fat that helps to curb hunger and help you feel fuller longer!

Here are a few ways that you and your family can enjoy peanut butter as a snack or a meal:

Peanut Butter Fruit Dip:
1 cup plain yogurt
3 Tablespoons peanut butter
2 teaspoons honey or maple syrup

This dip goes well with apples, carrots, celery or whole wheat crackers

Breakfast Pizza:
Use a premade thin crust pizza dough, whole wheat tortilla or flatbread. Spread peanut butter on the surface and decorate it with fresh fruit like blueberries, strawberries or bananas. “Create your own pizza” is a great way to get the kids involved in their meal!

Peanut Butter & Banana Pancakes:
Use peanut butter in pancake batter in place of oil in a recipe, or simply add a couple tablespoons to pancake mix with water. Top with bananas for a perfect flavor combination!

Apple “Donut” Slices:
Cut an apple horizontally into thick slices and remove the center core. Spread peanut butter onto each slice. Top with raisins, chocolate chips, cinnamon, blueberries, or your favorite combination.

Savory Peanut Sauce:
¼ cup creamy peanut butter
¼ cup lime juice or rice vinegar
2 Tablespoons soy sauce
Water to thin it out
Optional Sriracha for a little kick!

This peanut sauce can be used as a creamy dressing over roasted veggies, pasta noodles, as a salad dressing or in a healthy stir-fry with veggies over rice

If you or a family member has a peanut allergy, sunflower seed butter can be used in place of peanut butter in these recipes.
